Nutty Snack Bars


  • 2 cups whole almonds
  • 1/2 cup desiccated coconut
  • 1/2 cup flaxseed
  • 1/2 cup macadamia nuts
  • 1/2 cup almond butter
  • 1/2 cup coconut oil
  • 1/2 cup frozen blueberries
  • 1/2 teaspoon pure stevia extract powder

Mix all the dry ingredients and whizz in a mini chopper to cut the nuts down whilst keeping some chunky bits.

Melt coconut oil and stir into the dry mix with the almond butter.

Press into a baking tin and pop in the fridge until solid.

Cut into bars and keep in the fridge.

You can also melt 90% chocolate and pour over and pop back in the fridge to harden before cutting into bars for a choccy topping.
