
Preheat oven to 180 degrees.
Mix 112g ground almonds, 8g xantham, 2g baking powder, salt, tbsp water, 1 egg into a dough. Rest for 15 mins.
Roll between 2 non-stick sheets of baking paper. Recipe should make around 5 tacos.
Cut into circles (I use a saucer to cut round), dry fry til pale on one side and then flip and 5 seconds on other side.
Serve as soft tortillas or hang over an oven rack for around 5 mins to crisp up.
