Keto Carrot Muffins


Ingredients:

  • 1 cup ground almonds
  • Half cup desiccated coconut
  • Half cup oat bran
  • Half cup chopped walnuts
  • Half teaspoon pure stevia powder
  • Half teaspoon cinnamon 
  • 1 grated carrot
  • Zest one orange
  • Juice half an orange
  • 2 egg whites whisked
  • 2 egg yolks
  • Coconut cream

Method:

Preheat oven to 180. Combine all dry ingredients. Mix in carrot, orange, half cup of coconut cream and egg yolks, fold in egg whites, spoon into muffin cases and bake for 20-30 minutes.

For icing:
Whisk coconut cream, Philadelphia whipped cheese, squeeze of orange, pinch of stevia
