Chop veg, I’ve used cauliflower, red pepper and courgette, place in a non stick cooking tray, drizzle with olive oil, curry powder, turmeric, mild chilli powder (you could add further spice or fresh chilli if you like it hot!) Mix veg to get an even covering of the spice.
Place in a preheated oven at 200 degrees for around 45 mins, mix occasionally to baste the juices over the veg.
Grate some parmasan or pandano and keep to the side.
Season pork steaks and grill for a few minutes on each side. Rest for 5 mins.
Steam the tenderstem broccoli.
For the sauce I just heated creme fraiche and whole grain mustard.
Whilst heating the sauce sprinkle the parmasan over the veg and put back in the oven to melt.
