Raspberry Bakewell Cake


  • 200g ground almonds
  • Half cup coconut flour
  • 150g melted coconut oil
  • Teaspoon baking powder
  • Teaspoon pure Stevia powder
  • 3 large eggs
  • Raspberries
  • Flaked almonds


Preheat oven to 180.  Add the ground almonds, coconut flour, baking powder and stevia to a bowl and mix.  Then add coconut oil and eggs and whisk together to make a dough-like consistency. 

Line a loaf tin with baking paper.  Press half the mix into the bottom of the loaf tin, cover with raspberries or any other berry you fancy then press the remaining mix on top of the raspberries and sprinkle the flaked almonds in top. Bake in the oven for 50 minutes.

Serve with cream.
