This is just a basic soup recipe, any keto veg can be used in the same way.
Ingredients:
Onion
Garlic
Celery
Courgette
Brocolli
1 pint chicken stock
Herbs to taste
Method:
Chop all the veg and lightly cook over a medium heat in a large saucepan.
Add stock and any herbs of your choice.
Leave to simmer for 30 mins add extra stock if needed.
Blend with a hand blender until smooth or at desired consistancy.
Toppings can include grilled bacon strips, grated cheddar or parmesan, fried cubes of cheese bun as croutons, pork scratchings.
Add a swirl of double cream or creme fraiche and some drops of truffle oil if you fancy it.
Can be frozen and reheated in the microwave or on the hob.
