Blueberry & Pecan Cake


Ingredients:

1 cup ground almonds
1/2 cup desicated coconut
1/2 cup oat bran
1/2 cup coconut flour
1 cup broken pecans
1 cup frozen blueberries
1 teaspoon pure Stevia
1 cap vanilla essence
4oz melted butter
3 large eggs
2 large heaped tablespoons greek yoghurt

Method:

Preheat oven to 180 (fan oven)
Grease a circular cake tin
Mix almonds, desicated coconut, oat bran, coconut flour, stevia together.
Add blueberries, pecans, vanilla essence, melted butter eggs and yoghurt and mix well until mixture looks even.
Press into cake tin and put into oven for 20 mins or until knife comes out clean.
