Choccy Brownies with Orange Creme


125g Lindt 90% cocoa dark chocolate
125g unsalted butter
150g ground almonds
50g coconut flour
50g desiccated coconut
1 tsp Pure Stevia extract
1 tsp bicarbonate of soda
1 tbsp cocoa powder
3 large eggs
1 cup Total Full Fat Greek Yoghurt
1 vanilla pod

Melt chocolate and butter in a glass bowl over a simmering pan (dont let the water touch the bottom of the bowl), set aside.
Mix ground almonds, coconut flour, desiccated coconut, cocoa powder, stevia, bicarbonate of soda in a bowl.
Run a sharp knife down the centre of the vanilla pod and scrap the seeds into the greek yoghurt, separate the eggs and beat the egg yolks and add to the yoghurt and mix. 
Add the dry and wet ingredients together.Whisk the egg whites and fold into the mixture.

Put in a non stick baking tin, loose bottom tins work well or line with baking paper to help remove later.

Bake in a preheated oven at 140 degrees for 30-35 mins.

These taste great with an orange creme fraiche topping or Alpro coconut yoghurt.

Simply add one Stevia size teaspoon and 2 caps of orange essence to the creme fraiche mix well.
