Sausage Hot Pot

imageNot all sausages are low carb, chipolata’s are great and I have just found these Waitrose Toulouse Sausages with Smoked Bacon, Red Wine and Garlic that are only 3.3g per 2 sausages.

Fry the sausages until lightly cooked all over and remove from pan.  Add red onions, chestnut mushrooms, aubergine, red pepper (all chunky chopped) to the pan and soften, add paprika, garlic, rosemary.  Add a glass of red wine and 200ml of beef stock, simmer and then add to oven proof dish with the sausages.  I like to add some chopped tomatoes before putting in the oven.

Place in a preheated oven at 180 degrees for around 20-30 mins.

Serve with cauliflower mash.
Boil cauliflower florets until soft, drain and add spoonful of soft cheese, salt and pepper, blend with a hand blender.
