Liver, Bacon & Onions

imageChop a red onion and chestnut mushrooms fry in a little olive oil until soft.
Stir in paprika, and then add about 1/2 pint of beef stock and glass of red wine.
Simmer to thicken.

Boil cauliflower florets until soft.

Wash livers and shallow fry in a little olive oil until cooked, slightly pink in the middle is fine.   Grill the bacon rashers.

Before serving drain cauliflower add a spoonful of soft cheese, salt and pepper and blend with a hand blender.  A drizzle of truffle oil can be added if you are partial!
