Chop courgette into strips, whisk an egg with a fork in one bowl and put finely grated parmesan in another bowl.
Coat the courgette strips in egg and then parmesan ready for frying.
Heat vegetable oil in a wok/deep pan until hot, deep fry the courgettes a batch at a time, until golden, once done set aside on a plate with kitchen roll to absorb the oil, by putting each new batch on top will keep them warm.
Serve with burgers or any other meal of your choice, or simply as a tasty snack.
