Cheesey Buns

Ingredients

2.5 cups ground almonds
1/2 cup flaxseed
1 tsp bicarbonate of soda
1/2 tsp salt
6 oz grated cheddar cheese
1 small onion
3 large eggs
1/4 cup Total Greek yoghurt
1/2 cup water

Pre-heat oven to 185 degrees (fan oven).
Grate cheese and onion (I find it easiest to whizz up in a mini hand blender or chopper) and set aside.
Mix ground almonds, flax, bicarb and salt in a bowl.
Mix eggs, yoghurt, water in a separate bowl.
Add cheese and onion to dry mixture and mix evenly, then add the eggs, yoghurt and mix well.
Make a small handful into a ball and place on non-stick baking tray and slightly flatten.
Makes approx 12 good size buns.
Bake in oven for 30-35 mins depending on oven and size of buns.
