Pork Loin with Mustard Sauce


Chop aubergine, courgette, red onion, drizzle with olive oil and sprinkle herbs, roast in oven for 30 mins, add toasted pine nuts.

Steam broccoli florets until soft. Drain and spoon of cream cheese and season before whizzing with a hand blender.

Grill pork loin. Allow to rest before serving.

Heat creme fraiche and whole grain mustard for the sauce.
