Keto Pancakes

Ingredients:

4oz full fat cream cheese
4 large eggs
1/2 teaspoon cinnamon
1/8 teaspoon pure stevia for sweet pancakes leave out for savoury

Method:

Use a hand blender to mix all the ingredients together.
Heat a frying pan and a small cube of butter and pour in enough mixture to thinly cover the base of the pan.
Turn half way through cooking.

Add any filling you fancy, a favourite of mine is parma ham with grated fresh parmesan or for sweet pancakes melt down some 85% Lindt chocolate with some clotted cream.
