Method:
Blitz the cauliflower until it resembles rice like consistancy, put into a microwaveable container with a steam hole in the lid. Microwave for 3 mins and the fluff with fork repeat until cooked.
Whilst the cauliflower is cooking lightly fry the onion, leek and pepper until soft.
Add a cube of butter, salt and pepper to cauliflower and stir in onion, leek and pepper and microwave for 2 more mins. Stir in the feta and serve.
This is great as an accompaniment to a main course or with salad or on its own as a snack, delicious hot or cold.
You can also add other things like pine nuts, olives or any other keto friendly veg you fancy.
