Stuffed Aubergine


Ingredients:

Aubergine
Bacon
Cheddar
Parmesan
Brocolli
Leeks
Pine nuts

Method:

Half the aubergine lengthways, cut the flesh into cubes, drizzle with olive oil and any herbs to your liking.  Roast in at 180 (fan oven) for around 30 mins or until soft.
Grill the bacon rashers and cut into strips, add onto the aubergine with some grated cheddar and top with dried grated parmesan and cook until the cheese has melted.

Microwave the broccoli and lightly fry the leeks in butter.  Dry fry the pine nuts until golden.  Mix together before serving.
