Cauliflower Rice Pudding


Whizz up cauliflower florets in a hand blender.
Put in a microwaveable dish and cover with cling film and pierce a few holes.
Microwave for 4 mins, take out fluff with fork and microwave for another 3-4 mins until soft.
Put in a small saucepan and cover with just enough double cream and 1/8 tsp of pure stevia extract powder.
Heat to a simmer.
Defrost a small amount of frozen raspberries/blueberries/blackberries to stir into the pudding if desired.
