Keto Hot Cross Buns

Keto hot cross buns, toasted with butter

These taste so good and only 114 cals and 4g carbs which is way less than shop bought at 220 cals and over 40g carbs!

Mix dry ingredients – 150g fibre flour, 70g coconut flour, 30g psyllium husk, 80g granulated erythritol, 2 tsp baking powder, 1 tsp nutmeg, 2 tsp cinnamon, 2 tsp mixed spice, pinch salt. Then mix in rind of one orange and 50g Crazy Jack dark dried and rehydrated apricots (lowest carb and don’t use sulphur dioxide as preservative).

Add wet ingredients – 2 eggs, 75g melted butter, vanilla extract, juice of half an orange, 150ml single cream, 100ml unsweetened almond milk. Spoon onto non-stick lined baking tray (this mix made 16), then spray a little oil on hands and roll each bun to smooth over.

Baking in pre-heated oven 180 degrees fan for 20 mins. Then brush with 1 egg yolk and 1 tbsp water mix, put back in oven for 2 mins. Then add your crosses – 4 tbsp fibre flour mixed with 4 tbsp unsweetened almond milk to a paste. Return to oven for 3-5 mins.

Grill and serve with butter.
