Keto crumpets with butter

Keto crumpets! Delish with butter and nut butters, current fav is macadamia or pecan & almond. Whisk the eggs till fluffy, whisk in apple cider vinegar and melted coconut oil, then whisk dry ingredients in. Pour into greased ramekins and microwave (timings differ so takes a bit of trial and error) for 1000w I find just over a min per crumpet so for 4 it was about 4 min 20. Remove, slice in half and grill one side til golden.

Ingredients for 1 crumpet:

  • 1 large egg
  • Pinch of salt
  • 1tsp coconut flour
  • 1tsp psyllium husk
  • 1/4 tsp baking powder
  • 1 tsp melted coconut oil or flax oil
  • 1 tsp apple cider vinegar
