I can’t take credit for this one – it’s a Jamie Oliver recipe, but perfect for keto and so simple.
- 2 red onions
- 4 large tomatoes
- Red pepper
- Yellow pepper
- 6 crushed garlic cloves
- Boneless and skinless chicken thighs
- Smoked paprika
- Balsamic vinegar
- Olive oil
Chunky chop all the veg, add the thighs, sprinkle the paprika drizzle of balsamic and olive oil, mix all together to coat veg and chicken. Lay the thighs on top of the veg and cook for an hour on 180 degrees. I spoon the juices over mid way.
Serve with broccoli or cauliflower mash.
